The Inniskillin is a long-time master of the ice-wine craft. Started in 1974, it was the first vineyard in the Niagara region to get a winery license since prohibition in 1929. Hourly tours of its sprawling, almost corporate, estate are offered year-round; they range from a general overview of their operations to ones focused on ice wine or pairings with small bites.
